CONDUCTIVE HEAT FOR BASE LOAD CONTROL
The independently controlled dynamic deck is designed to sit directly over the responsive Incoloy heating elements. The natural cordierite stone heats quickly and evenly to maintain the correct temperature, cooking the pizza base to the desired finish, with just the right amount of charcoal for the classic wood-fired oven finish.
RADIANT HEAT FOR LEOPARD SPOTTED BARK
The intense radiant heat is evenly controlled by Sage's patent-pending heating elements, so you no longer need to turn food while cooking. Heat-concentrating parabolic reflectors maximize the efficiency of the upper heating elements by reflecting energy back to the hull. Integrated deck door design brings pizza closer to the elements and makes loading and unloading easier
CONVECTIVE HEAT FOR ROASTED PLANTS
Optimized for wood-fired and Neapolitan-style pizzas, the deflector shield is designed to protect your fragile toppings from intense heat and reflect radiant heat toward the crust for the leopard-spotted effect. For other pizza styles, the dynamic transition of the interior element ensures even browning of toppings, cheese and dough.
